Vitamin A toxicity (hypervitaminosis A)
But what about the risk of vitamin A toxicity? While vitamin A toxicity and deficiency are both severe, it's essential to understand that the likelihood of hypervitaminosis A is extremely low with proper nutrition. In particular, ensuring that you have a good intake of other fat-soluble vitamins, especially vitamin D, then vitamin A toxicity is highly unlikely. How much exactly would you need to have toxicity? More than 300,000 IU's per day,
for months, potentially years. To give you an idea, 1 ounce of beef liver is approximately 5000 IU's of vitamin A. That means you would need to consume 60 ounces of liver per day for months to years while being Vitamin D deficient to acquire vitamin A toxicity. That would be pretty hard to do, and it is unlikely anyone would ever consume that much in a day. One pound of liver is 16 ounces, so it's a stretch to eat just under 4 pounds of liver per day for months and years, all while being Vitamin D deficient.
Lastly, there is a big difference between supplementing with synthetic water-soluble Vitamin A, retinyl acetate, and supplementing with the real thing, foods like liver and egg yolks that have the fat-soluble form retinyl palmitate.
