Organs were mother nature's ultimate gift for our ancestors. Although almost completely forgotten, it is still her greatest gift for our complete health. Mr. Price was a highly regarded dentist that turned heavily into nutrition after many of his travels led him to write a book on the findings called "Nutrition and Physical Degeneration." He studied the diets and nutrition of various cultures. He was astonished to find the health of these individuals far trumping those of a western diet. They ate much more meat than initially anticipated. Organ meats and muscle meats were the staples. Their teeth fit perfectly in their fully formed mouths with zero decay. He contrasted this to the western cultures where flour, sugar, and modern processed vegetable fats dominated the nutrition pyramid. This diet caused nutritional deficiencies, and with that also came tooth decay, malformed jaws that overcrowded teeth, and dental caries.

We've been sold a bad bill of goods. The idea that saturated fat is terrible, that vegetables and highly processed foods are good, and any animal-related foods cause disease is exactly what's led to the steady decline in our health. 

It's time to set the record straight, and that means our health as well. The best thing to do is to keep it simple, discover what worked so well for humans for so many years. Because in a matter of 60 years, we were able to embark on a disastrous obesity epidemic, a diabetes epidemic, a heart disease epidemic, and the list goes on.

The bioavailability of D3 (cholecalciferol), the most biologically active form of vitamin D, is far superior to that of D2 (ergocalciferol). The liver has some of the highest concentrated levels of naturally occurring vitamin D3. 

Organ Meats For Energy

Organ meats are a complete nutritional powerhouse when it comes to energy. The liver and kidney are loaded with B vitamins, including vitamin B12, a significant factor in energy metabolism and support. Contrary to some plant-based ideology, B12 is not bioavailable in plant food sources and is just one reason millions of Americans are deficient. Obtaining B12 from complete food sources, such as the liver and kidneys, provides the best way for our bodies to utilize this crucial vitamin, given that it comes with all of the other natural enzymes, vitamins, and minerals that work together.

Moms and Babies

Primitive tribes gave first dibs on the nutrient-dense liver to expectant mothers after successful hunts. Today, your physician will likely recommend a folate supplement. The synthetic form, unfortunately, does not come close to the real thing found in nature. Folate (not to be confused with the synthetic form – folic acid) is critical to developing healthy babies in the womb. The Weston A. Price Foundation recommends 3-4 ounces of liver, 1-2 times weekly as ideal for pregnant women, based on the practices of these ancient tribes. We couldn't agree more.

Vitamin A toxicity (hypervitaminosis A) 

But what about the risk of vitamin A toxicity? While vitamin A toxicity and deficiency are both severe, it's essential to understand that the likelihood of hypervitaminosis A is extremely low with proper nutrition. In particular, ensuring that you have a good intake of other fat-soluble vitamins, especially vitamin D, then vitamin A toxicity is highly unlikely. How much exactly would you need to have toxicity? More than 300,000 IU's per day,

 for months, potentially years. To give you an idea, 1 ounce of beef liver is approximately 5000 IU's of vitamin A. That means you would need to consume 60 ounces of liver per day for months to years while being Vitamin D deficient to acquire vitamin A toxicity. That would be pretty hard to do, and it is unlikely anyone would ever consume that much in a day. One pound of liver is 16 ounces, so it's a stretch to eat just under 4 pounds of liver per day for months and years, all while being Vitamin D deficient.

Lastly, there is a big difference between supplementing with synthetic water-soluble Vitamin A, retinyl acetate, and supplementing with the real thing, foods like liver and egg yolks that have the fat-soluble form retinyl palmitate.
